For the tofu: 
  • 1 hinder (around 14 ounces or 400 g) firm tofu 
  • ⅓ glass (40 g) cornstarch

  • ⅛ teaspoon five zest powder 
  • ¼ teaspoon salt 
  • ¼ glass (60 ml) water 
For the rest: 
  • 1 tablespoon (15 ml) soy sauce 
  • ½ teaspoon dim soy sauce 
  • 2 teaspoons (8 g) sugar 
  • ¼ teaspoon (1 g) salt 
  • 1½ teaspoons (7 ml) rice vinegar 
  • ½ teaspoon sesame oil 
  • 2 teaspoons (5 g) cornstarch 
  • ⅔ glass (160 ml) warm water 
  • ¼ glass shelled nut or vegetable oil 
  • 1 glass (140 g) whitened shelled and skinless peanuts 
  • 2 medium carrots, slashed into pieces to coordinate the span of the peanuts 
  • 1 tablespoon (8 g) minced ginger, minced 
  • 3-5 dried bean stew peppers, de-seeded and cut into sections 
  • 3 cloves (13 g) slashed garlic 
  • 3 scallions, white parts just, diced

Directions :
